[Many knights (that aren't, say, Lan), after having been in the modern world for a few years, may have learned to adapt a bit more and start using modern technology and weapons. Those knights are clearly NOT Ser Jaime Lannister. He's still wearing his old, Westerosi Armor when he can, the weight a comforting familiarity in this strange new world, and still wielding his same old sword.
Luckily, he's at least adapted to showers and electric lights. Otherwise he'd be a great deal more smelly, considering all the time he puts into practicing. And riding horses.
It's a beautiful day today, so he's outside, practicing sword maneuvers against a particularly vicious-looking tree. But he'd certainly be happy to switch up his work-out routine with an actual person.]
